Winter Cheese Pairing for our Classic Cuvée 2014

We are big fans of cheese at All Angels...so much so that we thought we'd see how it paired when baked with our All Angels sparkling wines and wow it was superb!

For this occassion we chose Vacherin Mont d’Or and our All Angels Classic Cuvée 2014.

This exquisite cheese is a seasonal delight, crafted only between August 15th and March 15th when the cows return from their mountain pastures. Encased in spruce bark, it boasts a rich, voluptuous flavour with a hint of resin. Paired with our fruity cuvée, it's an autumnal symphony for your taste buds. Impress friends with this easy and delicious recipe that captures the essence of the season.

Our Baked Mont d’Or Recipe

Pre-heat the oven to 200˚C (180˚C fan).

Boil the potatoes until just soft, chuck in a knob or butter and set aside, keeping warm.
Remove lid from Mont D'or box and the plastic wrap from the cheese. Place on a baking tray. Scoop a teaspoon of cheese from the centre and make small cuts in the surface of the cheese and insert the garlic slices.
Pour over the All Angels English Sparkling Wine into the well (it will overflow slightly and sprinkle over the rosemary, seasalt and pepper.
Put the teaspoon of cheese back on top in centre and bake in the oven uncovered for 15 minutes until molten.
Serve while still hot with buttery potatoes, gherkins and raw seasonal veg. Dunk and enjoy!
