With fewer bubbles and softer acidity, this limited edition release is designed to complement the whole dining experience from aperitif to dessert, not just for celebrations.

NOTES FROM THE VINEYARD:
2018 was the first year we acquired mechanical frost protection, and we didn't need it! Spring was benign with a wet but warm bud-burst in April and May. The weather throughout the rest of the year was wonderful, with a good mix of rain and sunny weather. This delivered exceptional fruit and allowed us to experiment...conceiving No.36.
We harvested the majority of varieties on 23 September, with Chardonnay following on 29 September and 1 October.
We tweaked the grape blend and enabled a lighter fermentation whilst keeping our signature extended less ageing (6 years, well above industry standard), resulting in what founder Mark describes as "our own enigma variation."
The name is a reference to Elgar's Opus 36, Variations on an Original Theme aka The Enigma Variations, a nod to this being our own variation on an originial theme.
